My kids and I have always loved Sourdough bread. After my brother, C, tragically passed, I learned he had started and mastered making sourdough. I became inspired to give it try. There was so much science to learn about it that I was absolutely entranced. I’ve since learned that unlike yeast, sourdough’s fermentation process lowers the glycemic index, making it more digestible. It also creates prebiotics, which heal the gut, and is therefore, especially great for gluten sensitive patients! I used to dream about opening up my own bakery and it looks like I’m on my way to making that dream come true!!! Boy, would my brother be proud if he saw me today, carrying on what he started.
